Myanmar Green Tomato Salad
2 tbsp vegetable oil
1 onion halved and thinly sliced
1 tbsp peanut oil50g peanuts, very finely chopped
2 tbsp freshly chopped coriander
2 green chillies finely sliced
2 tbsp freshly squeezed limejuice
8 green tomatoes chopped
salt
Heat the vegetable oil in a frying pan, add the sliced onions and fry for 5-8 minutes or until browned.
Transfer the onions from the pan with a slotted spoon to a serving bowl, then add the remaining ingredients and toss to mix well.
Serve at room temperature.
